Watercress, Radish, and Grapefruit Salad

Watercress, Radish, and Grapefruit Salad 


Vegan, Fat Free, Saturated Fat Free, Trans Fat Free, Cholesterol Free, Good Source of Vitamins A and C 

Yield: Approximately 10 servings (~3/4 cup each)

Branch out of your usual salad green rut and try fresh watercress in this tasty recipe.
Ingredients
3 cups fresh watercress
16 ounces fresh radishes
2 medium fresh red grapefruit, peeled and cut into sections
2 teaspoons red wine vinegar
1 teaspoon Dijon mustard
½ teaspoon coarse kosher salt
½ teaspoon white pepper

Directions
1. Wash and dry watercress and radishes.
2. Remove thick/woody stems from watercress and coarsely chop the tender tops. Thinly slice radishes.
3. Combine red wine vinegar, Dijon mustard, salt, and white pepper to make a dressing
4. Combine watercress, radishes, and grapefruit slices
5. Drizzle produce with dressing. Serve chilled
