Peanut Butter Pecan Fruit & Oat Bars

Trans Fat Free, Low in Saturated Fat, Cholesterol Free, Low Sodium

Contains Peanuts

Yield: 12 bars

These no-bake bars contain both carbohydrates and protein, making them great for a pre- or post-workout snack or anytime hunger strikes. 

1 cup dried apricots
1 1/2 cups rolled or old-fashioned oats
1/2 cup roasted unsalted pecans, chopped into small pieces or pecan chips
1 tsp cinnamon
1/2 cup natural peanut butter, creamy or crunchy
2 tablespoons honey
2 tablespoons maple syrup

1. Process dried apricots in a food processor until small bits remain (about 1 minute). 
2. Toast oats at 350 degrees for about 15 minutes, until slightly golden brown. 
3. Place oats, processed apricots, pecans, and cinnamon in a large bowl and set aside. 
4. Combine peanut butter and honey in a microwave safe bowl and microwave until melted, about 1 minute. Stir and pour over oat mixture.
5. Add maple syrup to oat mixture and then mix thoroughly with a spoon or with your hands (If using hands, be sure the peanut butter mixture is warm, not hot).
5. Transfer to a small, rectangular dish lined with wax or parchment paper. 
6. Layer more wax or parchment paper on top of oat mixture and press down with your hands or a spatula until the mixture is uniformly flattened. Cover and chill in refrigerator for at least an hour or overnight. 
7. Remove from pan and chop into 12 even bars. Store in an airtight container in the refrigerator for up to a few days, or freeze extras for later use.
