Fresh Winter Salad



Vegan,Trans Fat Free, Cholesterol Free, Good Source of Vitamins A & C

Yield: 5 servings

Make the most of in-season winter fruit with this salad.

Ingredients
Salad:
1/2 head romaine lettuce, chopped
1 bunch watercress, chopped
1 shallot, thinly sliced
1/4 cup dried cranberries or pomegranate seeds
2 Tbsp shaved almonds

Dressing:
1 lemons, juiced and zested
2 tablespoons extra virgin olive oil
salt and pepper to taste

Directions
1. Toss the romaine and watercress then arrange on a platter. Arrange the shallots evenly over the greens. Top with dried cranberries & almonds.
2. Whisk the lemon juice, lemon zest, extra virgin olive oil, salt & pepper. Drizzle over salad.
