Sweet Potato Salad

Sweet Potato Salad

Vegetarian, Fat Free, Trans Fat Free, Cholesterol Free, Low Sodium, Good Source of Vitamins A & C

Contains Dairy

Yield: Approximately 9 servings


2 lbs sweet potatoes, cooked, chopped

1 red bell pepper

½ onion, chopped

4 scallions, chopped

1/3 c plain, low-fat yogurt

2 tbsp orange juice

1 tsp paprika

½ tsp cumin

¼ tsp black pepper


1.    1.  Combine yogurt, orange juice, paprika, cumin, and black pepper in a large bowl.

2.   2.  Add sweet potatoes, red pepper, onion, and scallions to yogurt mixture and toss.
