Spicy Black Eyed Pea Salsa *Vegan *Fat Free *Saturated Fat Free *Cholesterol Free
Yield: 12 servings Ingredients 1 (15 ounce) can black-eyed peas (rinse and drain) 1 (15 ounce) can whole kernel corn, drained 1/2 cup chopped red onion 1/2 cup chopped green bell pepper 1 (4 ounce) can diced jalapeno peppers 2 medium chopped tomatoes 1/2 teaspoon garlic powder 1 teaspoon of cumin 1 tablespoon of finely chopped fresh cilantro Dash of cayenne pepper (optional) Instructions: In a mixing bowl combine black-eyed peas, corn, onion, green bell pepper, jalapeno peppers, cilantro, cumin, garlic powder, cayenne pepper and tomatoes. Cover, and refrigerate overnight to blend flavors.
