Savory Watermelon Salad


Vegetarian, Low Fat, Low Sodium, Good Source of Vitamins A & C

Contains Dairy

Yield: Approximately 9 servings (~1 cup each)

This refreshing summer salad offers a new way to enjoy watermelon-- in a savory rather than sweet salad. Bring this to your next cook out!

Ingredients
5 cups watermelon, diced
1/3 cup feta cheese, crumbled
½ cup red onion, chopped
½ cup cucumber, chopped
15 oz. yellow corn, canned, drained
3 T lime juice
1 T olive oil
3 T basil, chopped

Directions
1. Place watermelon, feta cheese, red onion, cucumber, and corn in a large mixing bowl. Gently mix.
2. Mix lime juice, olive oil, and basil together. Pour over watermelon salad and gently mix.
3. Refrigerate until ready to serve.
