Pear, Walnut & Blue Cheese Salad with Honey Dressing

Vegetarian, Trans Fat Free, Low Sodium

Contains Dairy & Nuts

Yield: Approximately 8 servings (~3/4 cup each)

Sweet pears and tangy blue cheese complement each other perfectly in this colorful salad.

¼ cup golden or regular balsamic vinegar
1 teaspoon honey
1/8 teaspoon black pepper
¼ cup olive oil

4 medium pears, skin on, diced
1 cup dried walnuts, chopped
½ cup fresh chopped arugula or mixed greens
2 ounces blue cheese, crumbled

1. Combine balsamic vinegar, honey, black pepper, and oil to make a dressing. Whisk until well combined.
2. In a large bowl, combine pear dices, walnuts, and greens.
3. Drizzle dressing over top of salad mixture.
4. Top with blue cheese crumbles.
