Orange Poached Beets with Green Beans & Goat Cheese


Vegetarian Trans Fat Free, Cholesterol Free, Low Sodium, A Good Source of Vitamins A and C

Yield: 8 servings

This dish makes an eye-catching first course for your next dinner party.

Ingredients
4 medium beets
1 lb. green beans
2 cloves garlic julienned
1 bunch watercress, rinsed and chopped
4 oz. goat cheese
1 cup orange juice
¼ cup balsamic vinegar
3 tbsp granulated sugar
¼ cup extra virgin olive oil
salt & pepper to taste

Directions
1. In a large pot, simmer beets in orange juice, balsamic vinegar, sliced garlic and sugar. Add enough water to just cover the beets.
2. When beets are tender, remove and place in an ice bath to cool. Peel beets and slice ¼ inch thick.*  Set aside.
*Tip: wear gloves, beets may stain your hands!
3. Reduce poaching liquid to 1 cup. Set aside to cool. Once cooled, whisk in ¼ cup olive oil to make a vinaigrette.
4. Blanch haricot verts in boiling water until bright green. Shock in an ice bath to stop cooking.
5. To serve, layer haricot verts on bottom of the plate. Top with sliced beets and drizzle with vinaigrette dressing. Finish with watercress and crumbled goat cheese. Add salt & pepper to taste.
