Orange and Beet Salad

Orange and Beet Salad 


Vegan, Low Fat, Low Saturated Fat, Cholesterol Free


Contains Nuts


Yield: Approximately 4 servings (~1 cup each)


Take this salad up a notch by using fresh beets and orange slices. Roast or steam beets, cool, and peel before combining with other salad ingredients. 


Ingredients 
1 cup mandarin oranges, canned, drained
1 cup sliced, canned beets, drained
1/2 cup sliced almonds 
1/2 cup raisins 
1 tablespoon fresh parsley
1/2 cup Italian salad dressing

Instructions 
1. Drain mandarin oranges and beets, cutting beets into bite-sized pieces if desired.  Place in a large bowl, add sliced almonds and raisins, and toss gently to combine. 
2. Top with Italian salad dressing and parsley. Serve immediately.
