Mixed Greens with Oranges

Mixed Greens with Oranges 



Vegan, Low Fat, Saturated Fat Free, Cholesterol Free, Low Sodium, Good Source of Vitamins A & C 

Yield: Approximately 7 servings (~ 1 ¼ cup each)

This light, refreshing winter salad takes advantage of in season citrus. 


Ingredients
20 ounces (approximately 8 cups) mixed salad greens
¼ cup red onion, chopped
½ cup mandarin oranges, drained OR fresh orange slices, peeled and chopped
Dash of black pepper
¼ tsp Dijon mustard
2 ¼ tsp apple cider vinegar
2 ¼ tsp olive oil

Directions
1. Combine mixed greens, onion, and oranges in a large bowl.
2. Whisk together black pepper, mustard, apple cider vinegar, and oil.
3. Add dressing to large bowl and toss to combine.
