Kale Waldorf Salad

Vegan, Cholesterol Free, Low Saturated Fat, Good Source of Vitamins A & C

Contains Nuts

Yield: Approximately 4 servings (~1 cup each)

This lighter take on Waldorf Salad skips they mayo and adds nutrient-dense kale.

½ lb kale
1 c chopped apple (peel on, red preferred)
¼ c walnuts
¼ c raisins, unpacked
2 tsp apple cider vinegar
1 tsp salt, iodized
½ tsp white pepper

1. Combine vinegar, salt, and pepper to make the dressing.
2. Drizzle dressing over kale and toss gently to coat.
3. Add chopped apple, walnuts, and raisins to kale. Mix gently.
4. Garnish with thinly sliced apples, raisins, and/or walnuts. Serve chilled, immediately.
