Kale Salad with Hummus Dressing

Kale Salad with Hummus Dressing


Vegan, Trans Fat Free, Cholesterol Free, Good Source of Vitamins A & C

Yield: Approximately 10 servings

Hummus isn't just a dip anymore-- it adds creaminess and flavor to the dressing on this salad.

Ingredients
1 lb kale
½ red/yellow bell pepper, chopped
1 pint cherry tomatoes
¼ red onion, chopped
1/3 c hummus
2 garlic cloves, minced
¼ c lemon juice
3 tbsp olive oil
1 tbsp water
1 tbsp parsley, chopped

Directions
1. Combine kale, peppers, tomatoes, and onion in a large bowl.
2. In a separate bowl, combine hummus, garlic, lemon juice, olive oil, water, and parsley. Mix well.
3. Pour dressing over salad and toss. Served chilled.
