Heart-Healthy Black Bean Salad with Avocado, Tomatoes & Cilantro

Beans, avocado, and olive oil provide plenty of heart healthy fats and fiber in this tasty salad.
Ingredients
1 can (15 oz) reduced-sodium or no salt added black beans, rinsed & drained
1/2 avocado, diced
1/2 cup tomatoes, chopped
2 Tbsp cup red onion, diced
2 Tbsp cup fresh cilantro, chopped
Juice of 1/2 lime
1 clove garlic, minced
1 tablespoon olive oil
Black pepper, to taste
Directions
1. Place drained and rinsed black beans, avocados, tomatoes, red onion, and cilantro into a large bowl.
2. In a separate small bowl, combine lime juice, garlic, and olive oil. Whisk until well combined.
3. Drizzle lime dressing onto bean and avocado mixture. Mix until the dressing is evenly distributed. Season with pepper as desired.
4. Serve immediately or refrigerate until ready to serve.
