Greens & Beans Chicken Chili Trans Fat Free, Good Source of Calcium, Iron Contains Dairy, May Contain Soy Yield: Approximately 12 servings (~1 cup each) This unique take on chili is creamy and full of tasty greens and white beans. Ingredients 2 cups canned black beans, drained and rinsed 2 cups canned white beans (such as great northern or cannellini), drained and rinsed 4 cups canned diced tomatoes 1 bunch of kale or collard greens, stems removed & chopped 1 tablespoon olive oil ½ cup diced onion 2 tablespoons chili powder (or more, to taste) 1 tablespoon rotisserie chicken seasoning 2 large chicken breasts, cooked and cubed or shredded 1 cup heavy cream Directions 1. Heat oil in large pot over medium heat. Add onion and sauté until translucent and fragrant. 2. Add all other ingredients except for heavy cream, bring to a boil, then let simmer until beans are soft, greens are wilted, and all ingredients are heated through. 3. Add heavy cream just before serving. Stir gently to combine.
