Greek Lentil Salad


Vegetarian, Low in Saturated Fat, Trans Fat Free, Good Source of Iron

Contains Dairy

Yield: Approximately 9 servings, ~1/2 cup each

This Greek-inspired salad is packed full of energy and flavor.

Ingredients

½ lb (8 ounces) lentils
½ cup cucumber, diced
½ cup tomatoes, diced
¼ cup onion, diced
2 Tbsp feta
½ tsp salt
¼ tsp ground black pepper
¼ tsp garlic powder
1 T parsley, chopped
½ tsp oregano
2 Tbsp olive oil
2 tsp red wine vinegar

Directions
1. Cook lentils according to package instructions.
2. Combine lentils, cucumbers, tomatoes, onions, and feta in a large bowl.
3. In a separate bowl, mix salt, black pepper, garlic powder, parsley, oregano, oil, and red wine vinegar. Whisk until well combined.
4. Pour dressing over lentil mixture and toss.
