Grape & Quinoa Salad

Low Sodium, Cholesterol Free, Good Source of Iron

Contains Nuts

Yield: Approximately 8 servings (~1/2 cup each)

This simple salad is lightly sweet and packed with protein and healthy fats, making it a filling side dish. 

Ingredients
1 cup quinoa, dry
1/2 cup grapes, sliced
1/2 cup pecans, roughly chopped
1/4 cup green onion, chopped
1/4 cup olive oil
2 Tbsp lemon juice
1 1/2 tsp sugar
1/4 tsp salt, kosher

Directions
1. Cook quinoa according to package directions. Cool.
2. Combine lemon juice, sugar, and salt. Add olive oil a little at a time, whisking to emulsify.
3. Combine cooked quinoa, grapes, pecans, and green onion. 
4. Add dressing and stir to combine.
