Fresh Thai Salad with Peanut Dressing

Fresh Thai Salad with Peanut Dressing 

Vegetarian, Trans Fat Free, Cholesterol Free, Good Source of Vitamins A & C 
May Contain: Soy, Wheat, Peanuts 

Yield: ~10 servings 

Ingredients
For the dressing: 
1/4 cup creamy peanut butter, natural preferred 
2 tablespoons rice vinegar 
2 tablespoons freshly squeezed lime juice 
3 tablespoons olive oil
1 tablespoon soy sauce 
2 tablespoons honey 
2 1/2 tablespoons brown sugar 
2 cloves of garlic, finely minced or grated 
1 tablespoon freshly grated ginger 
1/2 teaspoon salt (optional) 
1/4 teaspoon crushed red pepper flakes 
2 tablespoons cilantro 

For the salad 
3 cups fresh Napa cabbage, shredded 
1 cup fresh purple cabbage, shredded 
1 cup carrots, grated 
1 small red bell pepper, diced 
1 small cucumber, diced 
1 cup edamame 
2 scallions, chopped 
1/2 cup fresh cilantro 

Instructions
1. Whisk all of the ingredients for the dressing together until combined. 
2. Prepare the salad by placing all of the salad ingredients into a large bowl.  Drizzle with the dressing and toss gently until completely coated.  Serve chilled and garnish with additional cilantro and lime wedges as desired.
