Fennel & Orange Salad

Vegan, Trans Fat Free, Cholesterol Free, Saturated Fat Free, Good Source of Vitamins A & C

Yield: Approximately 5 servings (~1.5 cups each)

Fennel adds a unique flavor to this salad. Store fennel by trimming an inch or two above the bulb, then store the bulb in the produce drawer in a plastic bag.
2 1/2 cups fennel, thinly sliced
1 1/2 cups mandarin oranges, drained OR fresh orange slices, peeled
5 cups spinach
1 tablespoon orange juice
dash of ground black pepper
1/4 teaspoon salt
1 1/2 teaspoons white wine vinegar
2 Tbsp olive or canola oil


1. Combine fennel, oranges, and spinach in a large bowl.
2. In a separate bowl, mix orange juice, salt, black pepper, white wine vinegar, and blended oil. Mix until well combined.
3. Pour dressing over fennel mixture, and toss. Garnish with orange twists.
