Fattoush Salad

 Vegan, Low Fat, Saturated Fat Free, Trans Fat Free, Cholesterol Free, Good Source of Vitamins A & C

Contains Wheat; May Contain Soy


Yield: ~15 servings



Zest and juice of 1 lemon

1 tablespoon olive oil

1 ½ cups chopped parsley

½ cup chopped mint

½ teaspoon salt


8 cups chopped romaine lettuce

2 cups diced fresh tomatoes

2 cups diced cucumber

1 cup chopped green onion

2 six-inch pita bread rounds, cut into ~1” squares, baked until crispy or ~2 cups pre-baked pita chips (Such as Stacy’s)



1. Wash and prepare the vegetables as directed.

2. Prepare the dressing by combining the lemon juice and zest, oil, mint, parsley, and salt.

3. Put the washed and prepared vegetables into a large serving container.  Drizzle the dressing over the vegetables and toss gently to combine. 

4. Top with green onion and pita chips.
