Curry Citrus Quinoa Salad

Curry Citrus Quinoa Salad 


Vegetarian, Low in Saturated Fat, Trans Fat Free, Cholesterol Free, Good Source of Vitamin C and Iron 

Contains Nuts

Yield: Approximately 7 servings (¾ cup each)


Ingredients
1 cup quinoa, dry
¼ cup orange juice
2 Tbsp lemon juice
2 Tbsp olive oil
1 tsp dijon mustard
2 tsp honey
1 Tbsp curry powder
2 Tbsp red onion
½ cup raisins
½ cup dried cranberries
½ cup almonds, chopped
2 Tbsp parsley, chopped
Salt and pepper to taste

Directions
1. Cook quinoa according to package instructions. Allow to cool.
2. Whisk together orange juice, lemon juice, oil, mustard, honey, and curry powder.
3. Place cooked quinoa, red onions, raisins, dried cranberries, almonds, parsley, salt, and pepper in a large bowl. Add dressing slowly and mix to combine.
