Classic Kale Salad 

Vegetarian, Trans Fat Free, Good Source of Vitamins A & C, Calcium

Yield: Approximately 7 servings (~1 cup each) 

Looking for a way to enjoy raw kale? This classic version is sure to be a hit. 

1 pound fresh kale, chopped
1/2 cup shredded red cabbage
1/2 tsp salt
1/4 tsp ground black pepper
1/4 tsp garlic powder
1/2 tsp sugar
1 tsp Dijon mustard
1 tsp lemon juice
1/4 cup apple cider vinegar
1/2 cup extra virgin olive oil
1/4 cup grated parmesan cheese

1. Combine kale and cabbage in a large bowl.
2. In a separate bowl, mix salt, ground black pepper, garlic powder, sugar, Dijon mustard, lemon juice, apple cider vinegar and olive oil until well combined.
3. Pour dressing over salad and toss gently. Sprinkle with parmesan cheese.
