Chili Rubbed White Fish with Sweet Corn Relish Trans Fat Free Contains Fish, May Contain Soy Yield: Approximately 4 servings This Latin-inspired fish dish is the perfect light meal for a hot summer night. Pair with a green salad for a delicious, well-balanced meal. Ingredients 1.5 pounds white fish of choice (e.g. catfish, cod, pollock, swai, or tilapia) 1 tablespoon olive oil 1 teaspoon chili powder 1 garlic clove, minced 1 cup Sweet Corn Relish (see recipe below) Directions 1. Rub white fish with blended oil. Rub with chili powder and garlic and oven-roast until internal temperature reaches 145oF 2. Relish: Add all ingredients together and mix. 3. Lay white fish in hotel pan and evenly distribute relish over the fish. Sweet Corn Relish Ingredients 8 ounces (about 1.75 cup) yellow corn kernels (frozen or cut from approximately 2 cobs) 1 red bell pepper, small dice 3 1/2 teaspoons cilantro, chopped 1 teaspoon olive oil 1 teaspoon fresh lime juice 1/2 teaspoon salt 1/2 teaspoon black pepper Hot sauce to taste Directions 1. Steam or lightly saute corn kernels. Allow to cool. 2. Combine corn kernels, bell pepper, and cilantro in a large bowl. 3. Combine remaining ingredients in a small bowl and whisk to combine. 4. Drizzle dressing over vegetables and mix thoroughly.
