Butternut Squash and Sage Quinoa

Butternut Squash and Sage Quinoa


Vegan, Cholesterol Free

Yield: ~10 servings


1 cup quinoa
2 cups vegetable broth

2 cups butternut squash, cubed

1 medium yellow onion, chopped
2 cloves garlic, minced
4 tablespoons olive oil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
1 teaspoon sage, chopped


1.      Chop the butternut squash into bite-sized pieces and steam until soft and reserve. 

2.      Cook the quinoa in vegetable broth until fluffy and reserve.

3.      Mix the garlic, blended oil, salt, pepper, and garlic powder to make a dressing.

4.      Combine dressing to butternut squash and quinoa.

5.      Garnish with fresh sage.

6.      You may serve it hot, cold, or at room temperature.
