Barley Salad with Nuts & Dried Fruit

Vegan, Cholesterol Free
Contains Tree Nuts, Wheat, May Contain Soy
Yield: ~5 servings

3 cups cooked barley
1 tablespoon sunflower seeds, salted
1 tablespoon almonds, sliced
1 tablespoon walnuts, halves and pieces
1 tablespoon raisins
1 tablespoon dried cranberries
1 tablespoon fresh green chopped onion
1 tablespoon fresh parsley, chopped
1 tablespoon blended oil
1 tablespoon vinegar, distilled
1 tablespoon sugar, white
1 teaspoon coarse kosher salt
½ teaspoon black pepper


1.      Mix oil, vinegar, sugar, salt and pepper together in a small bowl for the dressing.

2.      Combine remaining ingredients in a large bowl and stir well.

3.      Combine dressing with the barley mixture and toss well.
