Barley and Apple Salad

Barley and Apple Salad 



Vegan, Low in Saturated Fat, Trans Fat Free, Cholesterol Free, Good Source of Vitamin C 

Contains Wheat, May Contain Soy 

Yield: ~12 servings 

Ingredients
4 cups cooked barley, cooled
2 cups diced apple
1 cup raisins
1/4 cup apple cider vinegar
1 teaspoon salt
1 teaspoon black pepper
½ teaspoon nutmeg
½ teaspoon cinnamon
1/3 cup olive or canola oil
2 tablespoons lemon juice
1 cup fresh parsley

Directions
1. Combine cooked and cooled barley, diced apples, and raisins in a large salad bowl or desired service container.
2. Whisk together the apple cider vinegar, salt, black pepper, nutmeg, cinnamon, oil, and lemon juice.
3. Drizzle the dressing over the barley, apple, and raisins and toss gently to combine. Top with parsley.
