Apple Crisp

Vegan, Trans Fat Free, Cholesterol Free

Contains Wheat & Nuts

Yield: Approximately 12 servings (~1/2 cup each)

This classic fall dessert made with fresh apples and oats is a good alternative to apple pie.

5 cups peeled, cored apple pieces
1/3 cup white granulated sugar
½ tablespoon cornstarch
½ teaspoon ground cinnamon
1/8 teaspoon nutmeg
1 ½ tablespoons water
½ tablespoon lemon juice

1 cup quick oats
¾ cup flour (can use whole wheat flour)
¾ cup brown sugar, packed
¼ cup white granulated sugar
¼ cup pecans, chopped
¼ teaspoon baking powder
¼ teaspoon baking soda
1/3 cup olive or vegetable oil

1. Preheat oven to 350°F. Lightly oil and grease a 9”x 13” baking dish. Set aside.
2. To make the filling: in a medium-large bowl, toss the apple slices with sugar, corn starch, cinnamon, nutmeg, water, and lemon juice until evenly coated. Pour into the prepared baking dish.
3. To make the topping: in a medium mixing bowl, sift together the oats, flour, sugars, chopped pecans, baking powder and baking soda until well combined. Add the oil, mixing until the mixture is crumbly. Using your hands, crumble the mixture over the apple mixture.
4. Bake for 45 minutes to 1 hour, or until golden brown. Serve warm or cold.
